If you’re looking for a sweet and crumbly dessert to have with your coffee or tea, this Apple Cinnamon Crumb Cake is it. There’s lovely layers of cake and apples mixed with cinnamon crumbles, topped with a sweet cream.
This cake is deliciously soft and I mean, you can have it for breakfast or dessert, so that’s definitely a win. You’ll enjoy the warm spice and sweet apple flavor.
Apple Crumb Cake Ingredients
- Flour – make sure to scoop flour into your measuring cup for best accuracy as dipping directly into flour could give you too much, resulting in a drier cake
- baking soda + baking powder
- salt
- brown + granulated sugar – sweet and adds a little crunch to the crumbles
- cinnamon –
- vanilla –
- butter – unsalted, if you use salted, leave out the added salt
- egg
- sour cream – don’t skip this step! Sour cream gives you a moist and crumbly cake
- apples – 2 small-medium apples, tart or sweet will do

Making the Apple Crumb Topping
I love to mix my apples and crumb topping together instead of layering that part. Simply combine the diced apples, flour, sugars, cinnamon, salt, and vanilla with the melted butter.
Use a fork to toss around this mixture, pressing down occasionally to form larger crumble pieces. Set aside and prepare the cake batter.
If you prefer, though, you could leave the apples and crumble separate. Toss the apples in cinnamon and set aside. Mix together the crumble ingredients. When layering the cake, add all the apples to the middle layer and reserve the crumbles for the top.
Cake Batter
Cream together butter and sugar until light and fluffy with a hand mixer. Mix in the egg, and then the vanilla and sour cream.
In a separate bowl, combine the dry ingredients and 1/3 at a time, blend the dry mix into the wet bowl.
Assemble Crumb Cake
Line a 9×4 glass baking dish with parchment paper, or lightly grease. Spoon about 1/2 of your batter into the dish and spread with a spoon to cover the bottom of the pan. Don’t worry, this will be a thin layer but bake up nicely.
Then, spoon half of the apple crumble mixture. Add the remaining cake batter and then crumble mixture. Press the mixture down into the batter a bit. Bake for about 30-35 minutes.
Brown Sugar Cream
This is a simple and basic whipped cream. I like to use brown sugar and cinnamon to tie in all the flavors.
Whip together the brown sugar, cream, salt, cinnamon, and vanilla until soft peaks form. Cover and store in the refrigerator until ready to use, up to 3 days.

Ingredients
- Apple Crumble
2 small apples, peeled and chopped
1 1/2 cups all-purpose flour
1/2 cup + 2 tbsp brown sugar
1/4 cup granulated sugar
2 tsp cinnamon
1/2 cup butter – melted
1/2 tsp salt
1/2 tsp vanilla
- Cake
4 tbsp butter
1/2 cup sugar
1 lg egg
1 1/4 tsp vanilla
1/2 cup sour cream
1 cup all-purpose flour
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder
- Brown Sugar Cream
1 cup heavy cream
2 tbsp brown sugar
dash salt
1 tsp cinnamon
Directions
- Preheat oven to 350 degrees. Line a square, 9×4 glass baking dish with parchment paper. Or, lightly grease with oil.
- Apple Crumble
- Peel and chop apples.
- Combine flour, brown sugar, sugar, salt, and cinnamon in bowl.
- Add vanilla to melted butter, then pour into dry mix. Stir together with a fork to keep it crumbly.
- Add in chopped apples and toss together. Set aside.
- Cake
- In a separate bowl, cream together butter and sugar until light and fluffy.
- Add egg and mix. Then sour cream and vanilla and mix.
- Combine flour, salt, baking soda and baking powder in another bowl. Mix together this dry mix and butter mix until just combined.
- Add half of the batter to lined or greased baking dish. This will be a very thin layer.
- Spoon half of apple crumble mix over first layer. Using a fork, spread the mix evenly.
- Add remaining batter, and top with the rest of the apple crumble, again using a fork to evenly spread this mix over the top.
- Bake for 30 to 35 minutes.
- Brown Sugar Cream
- Whip together cream, brown sugar, salt and cinnamon until soft, but light firm peaks form. Place in fridge until ready to serve.
Spoon over warm Apple Cinnamon Crumble Cake and enjoy!
Notes
- If preferred, instead of combining the apples and crumb mixture, keep them separate and layer all the apples coated with cinnamon in the middle of the cake and top with just the crumble.
